Hands-on Creole cooking classes in private homes and dedicated culinary schools around Moka and the central plateau offer the most intimate insight into Mauritian culture available to visitors. Classes begin with a morning market visit to buy fresh spices, vegetables, and seafood, before returning to the kitchen to prepare a multi-course Creole meal: cari poisson, riz gras, rougaille, and the iconic halwa dessert. Participants eat what they cook, accompanied by local rums or fresh juices. Evening classes with a sunset terrace setting are particularly popular.
