Mauritian Mazavaroo: The Fiery Chilli Condiment You Need to Try
Mazavaroo is a punchy, deeply flavoured Mauritian chilli paste made with dried red chillies, garlic, and spices — a table condiment that adds heat, complexity, and authentic island character to virtually any dish.
What Is Mazavaroo?
In Mauritius, no table is truly complete without mazavaroo. This intensely flavoured chilli condiment is made from dried red chillies blended with garlic, ginger, spices, and oil into a thick, deeply red paste. The flavour combines serious heat with a complex, slightly smoky depth.
Making Mazavaroo at Home
Ingredients:
- 20 dried red chillies (remove stalks; keep seeds for maximum heat)
- 6 cloves garlic; 1 tablespoon fresh ginger
- 1 teaspoon cumin seeds; ½ teaspoon mustard seeds
- 1 tablespoon white wine vinegar or lime juice
- 4 tablespoons vegetable oil; salt to taste
Method:
- Soak dried chillies in boiling water for 20 minutes. Drain.
- Toast cumin and mustard seeds in a dry pan until fragrant.
- Blend chillies, garlic, ginger, toasted spices, and vinegar until smooth.
- Heat oil in a small pan. Add the chilli paste and fry, stirring constantly, for 5–8 minutes until the oil separates and the paste darkens.
- Season with salt. Cool completely before storing in a sterilised jar.
Keeps refrigerated for 3–4 weeks, always covered with a layer of oil.
How to Use Mazavaroo
- Stir into dholl puri fillings
- Serve alongside fried noodles or rice
- Use as a marinade base for grilled meat or fish
- Add to fish or chicken curry for extra kick
