  • 2 large eggs

  • 4 tablespoons of soy sauce

  • 2 tablespoons of oyster sauce

  • 2 tablespoons of vegetable oil

Procedure

  1. Prepare the Ingredients: Start by prepping all your vegetables and chicken. This step ensures you have everything ready when it's time to fire up the wok.

  2. Cook the Noodles: Boil the fresh egg noodles as per the instructions on the packet. Rinse in cold water to stop the cooking process and set aside.

  3. Stir-fry the Chicken: Heat a tablespoon of oil in a wok or large frying pan. Add the sliced chicken and stir-fry until cooked through. Remove the chicken from the pan and set aside.

  4. Stir-fry the Vegetables: Add the remaining oil to the pan, then add the onions, carrots, bell pepper, and garlic. Stir-fry until the vegetables are tender-crisp.

  5. Add the Noodles and Sauces: Return the chicken to the pan with the vegetables. Add the cooked noodles, soy sauce, and oyster sauce. Stir everything together, ensuring the noodles and ingredients are well-coated with the sauce.

  6. Scramble the Eggs: Push the noodle mixture to one side of the pan, crack the eggs into the empty side, and scramble until cooked. Mix the scrambled eggs with the noodle mixture.

  7. Season and Serve: Season the Mine Frite au Poulet with salt and pepper to taste. Serve hot and enjoy the medley of flavors that is quintessentially Mauritian.
